Newfoundland fish & brewis
Yield: 6 Servings
Ingredients:
- 1 lb Salt Codfish
- 4 Hard Bread (Hard Tack)
- 1/4 lb Salt Pork Diced
- 1 md Onion
- 1/2 ts Pepper
Instructions:
Soak salt codfish overnight in cold water and drain.Add fresh cold water and cook fish then simmer for 15 minutes.Drain water remove skin and bones.Soak Hard bread until it can be diced.In frying pan fry up the salt pork until crisp and remove.Fry onions in remaining fat and drain.Mix codfish hard bread pork and onions in pot and serve.
