Eggsclusive sandwiches
Yield: 1 Servings
Ingredients:
- 4 Hard-cooked eggs chopped
- 1/2 c Finely chopped celery
- 1 1/2 ts Diced pimiento
- 1/4 ts Salt
- 1/8 ts Pepper
- 1 tb Chopped fresh parsley (optional)
- 1/3 c Mayonnaise or salad dressing
- 12 sl Buttered toast
- 2 Tomatoes sliced
- 8 sl Bacon cooked and drained
- 4 Lettuce leaves
Instructions:
Combine eggs celery pimiento salt pepper and parsley if desired; add mayonnaise and stir well. Spread egg mixture on 4 slices of toast; top each with another slice of toast. Arrange tomato slices bacon and lettuce on top of toast. Top with remaining toast. Cut each sandwich into quarters to serve using wooden picks to hold layers together. Yield: 4 servings.
