Shearing cake(welsh)
Yield: 1 Cake
Ingredients:
- 1 lb Flour
- 2 Eggs
- 1 ts Baking powder
- 2 pt Milk
- 8 oz Butter Pinch grated nutmeg
- 12 oz Sugar Rind of 1 lemon
- 2 ts Caraway seeds
Instructions:
(CACEN GNEIFIO) Rub the butter into the flour and add the other dry ingredients. Mix thoroughly. Beat the eggs. Stir the eggs and milk into the flour mixture. Bake in a tin lined with greaseproof paper. Bake in a moderate oven (350/F. or Mark 4) for 30 minutes and then at 300/F. or Mark 2 for a further 12 hours.
