Sausage jambalaya
Yield: 1 Servings
Ingredients:
- 1 lb Sausage or cubed beef
- 3 tb Bacon drippings
- 3 tb Flour
- 2 Med. onions chopped
- 2 ts Salt
- 1 Bunch green onions chopped
- 2 tb Chopped parsley
- 2 Cloves garlic chopped
- 2 1/2 c Water
- 2 c Rice
- 3/4 ts Red pepper
Instructions:
Brown meat in bacon drippings remove and add flour. Use a heavy skillet and brown flour to a dark roux. Add onions parsley and garlic. Cook until soft then add water and rice salt pepper and browned meat. Bring to a boil lower heat to lowest point and cook about 1 hour covered tightly.
