Mr. food's hash for a bash
Yield: 6 Servings
Ingredients:
- 1 pk Butter
- 2 md Onions diced 2 cups
- 1 lb Frozen hash brown potato - cubes thawed
- 1 lb Diced cooked corned beef 3 - cups
- 8 Eggs
Instructions:
======================================================= ============== ==== == Preheat the oven to 350F. In a large skillet heat the butter over medium-high heat and sauté the onions for 3 to 4 minutes until tender. Add the potato cubes and cook for 10 to 12 minutes stirring occasionally. Add the corned beef and cool for 5 to 6 minutes until heated through. Place the mixture in a 9X13 baking dish that has been coated with nonstick vegetable spray and with a serving-sized spoon make 8 evenly spaced indention's about 1/2 inch deep in the mixture. Crack the eggs one at a time and place each egg in an indention. Cover the dish with aluminum foil and bake for 20 to 25 minutes or until the eggs are cooked to your liking.
