Mock crawfish salad
Yield: 8 Servings
Ingredients:
- 3 lb Red snapper fillets
- 4 Slices lemon
- 1 sm Onion sliced
- 1 c Celelry chopped fine
- 1 Large carrot grated
- 2 qt Water
- 1 sm Onion minced
- 3/4 c Chili sauce
- 2 ts Salt
- 1/4 ts Pepper
- 1 c Mayonnaise
Instructions:
Bring water to boil in large kettle. Add red snappes lemon sliced onion sald and pepper. Continue to boil for 20 min. Drain fish; cool and flake. Toss fish with minced onion celery carrot chili sauce and mayonnaise. Adjust salt and pepper to taste. Chill overnight.
