Monterey penne
Yield: 2 servings
Ingredients:
- 1 Red or green pepper
- 4 c Hot cooked penne pasta -cut in julienne strips -drained -(or Both) 1 c Monterey jack cheese
- 1 c Quartered fresh mushrooms -shredded
- 1 Onion coarsely chopped Place veggies and 2 tbsp water in a covered microwaveable dish. Cook on high for 4-5 minutes. Drain veggies and toss with pasta and cheese. Makes
