Les' cottage cheese garden salad
Yield: 6 Servings
Ingredients:
- 24 oz Cottage Cheese small curd
- 1 Stalk celery diced
- 1/2 Carrot grated
- 1/2 Green Bell Pepper seeded -diced
- 4 Scallions diced
- 1 Plum tomato
Instructions:
seeded diced Salt and Pepper to taste Mix all ingredients together. Refrigerate for 1 to 2 hours. (Overnight is best. Serve on a bed of fresh spinach or lettuce. Garnish with chopped or whole scallions.
