Oat bran squares

Instructions:

Oat bran is a good source of fiber. These crackers are not only

healthy, they also taste good. They are worthy of a large glass of

freshly-squeezed orange juice.



325~ F 18 to 22 minutes Preheat the oven to 325~ F.



Combine the oat bran, flour, salt, and baking soda in a large bowl or

in the food processor. Cut in the butter until the mixture resembles

coarse meal.



Dissolve the honey in the hot water and blend it into the flour

mixture. If the dough is too wet for rolling, quickly add a little

more flour.



Divide the dough into 2 equal portions for rolling. On a floured

surface or pastry cloth, roll to about 1/8 inch. With a sharp knife,

cut the dough into 2-inch squares. Place them on a lightly greased or

parchment-lined baking sheet. Prick each square in 2 or 3 places with

the tines of a fork. Bake for 18 to 22 minutes, or until medium

brown. Cool on a rack. Yield: 50-55.



VARIATIONS: Substitute wheat bran for oat bran. For a more delicate

cracker, roll the dough thinner and reduce the baking time to

compensate.

2/3 c Oat bran

2/3 c Oats

2/3 c Oat flour

1 1/2 c Bread flour

1/2 c Whole wheat flour

1/4 c Nonfat dry milk

1/3 c Shreaded carrots

1 1/2 ts Cinnamon

1/3 c Sunflower seeds

2 1/2 ts Yeast



Place in pan according to custom. Press start

1 1/4 c Warm water

1/2 c Mashed potato flakes ; insta

instant mashed potatoes added to white or oat bread make it

moister and make the little bit that is left better the next day.

I put the flakes in below the flour if I am using the timer.

Title: OAT BRITTLE

1 c Sugar

1/2 c Flaked oat cereal, uncooked

1/8 ts Salt

1/8 ts Baking soda

2 tb Melted butter



Caramelize sugar. Stir constantly. Remove from fire immediately.

Stir in the oat cereal quickly. Add salt, baking soda, and butter.

Pour onto well-buttered baking sheet. Stretch and pull by means of

spatulas into a very thin sheet. The Household Searchlight

1 1/2 c Rolled oats

1 c Flour

1/2 c Wheat germ

1/2 ts Salt

1/3 c Oil

2/3 c Water



Mix dry & wewt ingredients separately. Then combine them together.

Roll out dough 1/8 thick onto an oiled cookie sheet. Score & bake at 325F for 25 to 30 minutes.
