Mexican pepper chicken
Yield: 6 Servings
Ingredients:
- 1 Medium Onion chopped
- 1 Clove Garlic crushed
- 2 tb Vegetable Oil
- 1 tb Chili Powder
- 1 tb Crushed Red Peppers
- 1 lb Boneless & Skinless Chicken Cut into strips
- 1 Each Green & Red Pepper Cut into strips
- 1 c Chili Sauce
- 2 tb Red Wine Vinegar
Instructions:
Cooked Rice * Cook and stir onion and garlic in hot oil until onion is softened. Add chili powder and crushed red peppers and cook gently 5 min longer stirring occasionally. Add chicken and cook over medium heat for 5 min stirring frequently. Add peppers chili sauce and wine vinegar bring to a boil and simmer for 15 min stirring occasionally. Serve over cooked rice. Chili rice mix can be substituted for plain rice.
