Mediterranean white bean soup
Yield: 1 Servings
Ingredients:
- 2 c White beans note)
- 7 c Water
- 1 Onion chopped
- 6 To 7 cloves minced garlic
- 2 Potatoes peeled and -chopped
- 8 oz Can water-packed artichokes -drained
- 4 oz Can sliced -black olives drained
- 8 oz Can tomato sauce
- 1 ts Italian herb mix Place the beans in a large pot with the water. cover and cook over medium heat for 1 hour. Add the onion and garlic and continue to cook until the beans are tender
- 1 to 1 1/2 hours. add the potatoes
Instructions:
and cook another 20 min. Add the remaining ingredients and cook for about 10 more min. Note: if you soak the beans overnight the total cooking time may be reduced by 30 min.
