Zucchini toss
Yield: 4 Servings
Ingredients:
- 1/4 c Vegetable/olive oil
- 1 tb Red wine vinegar
- 1/4 ts Dry mustard
- 1/2 Head lettuce
- 1 Medium zucchini thin sliced
- 2 Green onions sliced
- 2 tb Dry red wine
- 1/2 ts Salt
- 1/4 ts Paprika
- 1/2 Small bunch romaine
- 1/2 c Sliced radishes
- 2 tb Crumbled blue cheese
Instructions:
Shake oil wine vinegar salt mustard and paprika in tightly covered jar. Refrigerate until chilled. Tear greens into bite sized pieces in large salad bowl. Mix in remaining ingredients. Shake dressing; pour over salad. Toss until greens glisten.
