Summer vegetables
Yield: 4 Servings V
Ingredients:
- 4 ea Cloves garlic minced
- 2 c Zucchini sliced
- 2 c Yellow squash sliced
- 1 c Tomato chopped
- 1/2 c Green bell pepper sliced
- 1/2 c Vegetable stock
- 1 tb Chopped fresh basil
- 1 ts Dried whole basil
Instructions:
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add garlic and cook 1 minute. Add zucchini and next 4 ingredients. Cook 3 minutes or until vegetables are crisp-tender stirring constantly. Stir in basil. Yield: 4 servings. Frances Wiltshire in "Southern Living" June 1991
