Sauteed plantains & sweet potatoes
Yield: 6 Servings
Ingredients:
- 2 tb Butter or margarine
- 2 tb Cooking oil
- 2 c Sliced cooked sweet potatoes -or yams
- 2 Plantains peeled & chopped
- 1/2 c Chopped green onion
- 1/2 c Chopped cooked ham (opt)
- 1 Garlic clove minced
- 1/2 c Chicken or beef broth
- 2 tb Butter or margarine
- 2 tb Chopped fresh thyme
Instructions:
dill -chervil or savory Salt to taste Pepper to taste In a large skillet melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes plantains onion ham if desired and garlic. Cook stirring frequently about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season to taste with salt and pepper.
