Red cabbage & apples
Yield: 8 Servings
Ingredients:
- 2 lb Red cabbage finely shredded
- 8 ea Juniper berries crushed
- 1/4 pt Boiling water
- 1 ts Salt
- 8 oz Onions chopped
- 8 oz Apples chopped
- 2 oz Soft brown sugar
- 1 ts Caraway seeds
- 1 ea Bag bouquet garni
- 1 tb Cornstarch
- 3 tb Malt vinegar
- 1 tb Cold water Place red cabbage junipers
- 1/4 c boiling water & salt in a large
Instructions:
pot. Bring to the boil cover & simmer for 30 minutes. Stir in remaining water onions apples sugar caraway seeds & bouquet garni. Cover & cook gently for 1 1/2 hours stirring frequently. Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes. Stir often to prevent sticking.
