Pierre franey's broiled tomatoes
Yield: 6 Servings
Ingredients:
- 6 md tomatoes
- 24 slivers garlic : salt to taste if desired : freshly ground pepper to : taste
- 3 TB olive oil
- 4 TB Parmesan cheese -- grated
- 4 TB fresh basil -- chopped
- 1. Preheat the broiler to high
Instructions:
500 degrees. 2. Cut the tomatoes in half and arrange cut side up in a baking dish. Insert 2 garlic slivers in each half. 3. Sprinkle with salt pepper and olive oil. Sprinkle with the cheese. 4. Place under the broiler for about 5 minutes until bubbling and the garlic tips start to brown. Remove garlic sprinkle with basil and serve. Yield: 6 servings.
