Minted rice
Yield: 2 Servings -
Ingredients:
- 1/2 c Long grain white rice
- 1/2 md Cucumber; diced
- 1/4 c Fresh mint; chopped
- 1/2 c Nonfat plain yogurt
Instructions:
Salt Black pepper Bring 3 to 4 quarts water to boil. Add rice; boil 10 mins. Mix cucumber mint and yogurt in a serving bowl. Drain rice; add to bowl. Add salt and pepper to taste. Toss well. Source: TPA Trib 2/16/95
