Mashed potatoes biablo
Yield: 6 Servings
Ingredients:
- 8 md Potatoes peeled
- 1 c Soy milk
- 2 tb Margarine
- 2 ts Lemon juice
- 1 tb Dijon
- 1 ts Turmeric
- 1 ds Cayenne
- 2 tb Parsley
Instructions:
chopped Place potatoes in a large pot cover with water lightly salted & boil until tender. Drain & mash mixing in enough soy milk to make the potatoes moist & fluffy. Stir in remaining ingredients & serve. NOTE: Warm the milk to prevent the potaotes becoming heavy & lumpy as you mash them. Vegetarian Gourmet Spring 1995
