Leek soup
Yield: 6 Servings
Ingredients:
- 1 1/2 lb Leeks (about 6 cups) washed -trimmed and cut into 1 in. -pieces
- 3 c Chicken Broth
- 2 Apples peeled and cut into -1/2 inch pieces
- 1 Potato peeled and thinly -sliced
- 1/2 c Orange Juice
- 1/2 c Tomatoes chopped
- 1/2 c Carrots thinly sliced
- 1 tb Fresh basil OR 1 1/2 t dried
- 1/2 ts Curry Powder
Instructions:
Salt and Pepper to taste Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches in a blender or processor until smooth. Reheat and serve. SOURCE: Know Your Onions SHARED BY:Jim Bodle 8/92
