Island sweet potato pudding
Yield: 4 servings
Ingredients:
- 12 oz Cooked sweet potatoes; 2 ts Reduced calorie margarine -peeled and cut in chunks 1/4 ts Ground nutmeg;
- 1 md Ripe banana; mashed 1 ts Rum extract;
- 3 ts Brown sugar; firmly packed 1 Egg white;
- 2 tb Reduced calorie margarine; +
Instructions:
Preheat oven to 350. In a large bowl beat all ingredients except egg white until smooth. Add a small amount of water if necessary to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking srpay. Bake uncovered 45 to 50 minutes until lightly browned. Per serving: 3g protein 4g fat 28g carb. 147mg sodium 0mg chol. 174 calories.
