Easy succotash
Yield: 6 servings
Ingredients:
- 2 c Lima beans fresh; about 1lb 1/2 c Cream whipping
- 4 c Corn fresh; cut from cob 1/2 ts Salt -about 8 ears 1/8 ts Pepper
- 3 tb Butter (or marg.)
Instructions:
Cook beans in boiling salted water about 15 minutes or until almost tender; drain. Add corn butter whipping cream salt and pepper; mix well. cook over low heat stirring often 7 to 10 minutes or until corn is done. SOURCE: Southern Living Magazine July 1980. Typos by Nancy Coleman.
