Crispy sweet potato wedges
Yield: 4 Servings
Ingredients:
- 3 Sweet potatoes (about 2 1/2 -pounds)
- 1 Egg
- 1 Clove garlic minced
- 1/2 c Dry bread crumbs
- 1/2 c Freshly grated Parmesan -cheese
- 1 ts Each dried basil and oregano
Instructions:
Peel potatoes; cut each lengthwise into 8 wedges. In large bowl whisk together egg garlic and 1 tbsp. water. Add potatoes; toss to coat evenly. In shallow dish combine bread crumbs Parmesan cheese basil and oregano; roll potato wedges in mixture to coat well. Bake on greased baking sheet in 425øF oven for 15 minutes.
