Braised leeks & green beans
Yield: 8 Servings
Ingredients:
- 1/2 c Sherry
- 1 ts Olive oil
- 5 c Leeks well washed
- 1 c Wild mushrooms sliced
- 2 c Green beans cut into -- 1/3" lengths
- 1 ts Orange juice
- 1/2 ts Orange peel grated
- 1 tb Cider vinegar
Instructions:
Salt & pepper In a large skillet heat sherry & oil over medium high heat. Add leeks & cook stirring frequently for 3 minutes. Add mushrooms & beans. Saute until the mushrooms begin to exude moisture about 5 minutes. Stir in the remaining ingredients & remove from heat. Serve warm.
