Statesborough meatloaf
Yield: 6 Servings
Ingredients:
- 1 1/2 tb Vegetable oil
- 1 md Onion -- chopped
- 3 md Garlic cloves -- crushed
- 2 lb Lean ground beef
- 2 ts Salt
- 1 ts Black pepper
- 2 Eggs -- beaten
- 3/4 c V-8 juice
- 1/2 c Fresh parsley -- chopped
- 1 tb Bottled Caribbean-style Sauce such as Hellfire & Damnation Hot Sauce
- 1 c Fresh breadcrumbs
Instructions:
Preheat oven to 350~. Heat the oil in a skillet and saute onion until translucent about 5 mins. Add garlic and saute one minute. Transfer the onion and garlic into a lg. mixing bowl and add the beef salt black pepper eggs juice parsley and sauce. Mix well. Oil a 12"x8"x2" pan and pour in mixture molding it into a loaf.
