Hot and sour mushroom soup (tom yam het)
Yield: 3 servings
Ingredients:
- 3 c Vegetable stock 2 tb Lemon juice
- 1 ts Nam Prik Pow sauce 2 oz Oyster mushrooms
- 1 Inch Lemon grass -- coarsely separated -- finely chopped into rings -OR- button mushrooms
- 3 Kaffir lime leaves 2 sm Fresh red or green chilis -- roughly torn into three - (more if desired)
- 1 ts Sugar -- crushed to split open
Instructions:
---------------------------------TO GARNISH--------------------------------- Coriander leaves In a large pan bring the vegetable stock to the boil and stir in the Nam Prik Pow sauce. Add the remaining ingredients and simmer stirring well until the mushrooms are just cooked but still al dente. Pour into a serving bowl and garnish with coriander leaves.
