Quick sweet potato pie

Yield: 4 Servings

Ingredients:

• 1 c cooked mashed sweet : potatoes
• 1 ts vanilla extract
• 1/2 stick melted diet margarine
• 1/2 c white sugar
• 1/2 c dark brown sugar
• 1/4 c egg substitute : ds salt : ds cinnamon and nutmeg
• 1 unbaked pie crust

Instructions:

Preheat oven to 400. Mix together sweet potatoes extract margarine white and brown sugars egg substitute salt cinnamon and nutmeg. Blend well. Pour into pie crust and bake 12 minutes at 400.
