Orange roughy with vegetables
Yield: 2 Servings
Ingredients:
- 2 lb Orange Roughy Fillets
- 2 tb Lemon Juice Divided
- 16 oz Can Stewed Tomatoes cut
- 1/2 ts Mixed Italian Herbs
- 1 c Celery; minced
- 1 c Onion; chopped
- 1 c Bell Pepper
- 1 c Mushrooms; sliced
- 1/4 ts Thyme
Instructions:
pn Garlic powder pn Hot Pepper flakes Spray a 13x9 Pan with non stick cooking spray and sprinkle with 1 tbls. of Lemon Juice. Arrange fish in a single layer and sprinkle with 1 tbls. Lemon Juice. Combine remaining ingredients and spoon over fish. Bake uncovered in a 350 Degrees oven for 25-30 Minutes until Fish flakes and sauce is thick. Serves 4: Each serving Counts 4 proteins 2 vegetables.
