Tomato-fish cossack stew
Yield: 6 Servings
Ingredients:
- 2 ea Onions chopped
- 2 ea Garlic cloves minced
- 1 tb Oil
- 36 ea Tomatoes peeled -OR
- 16 oz Canned stewed tomatos
- 8 oz Tomato sauce
- 1 Potatoes
- 2 tb Dill freshly chopped
- 1 ts Thyme leaves
- 1 tb Lemon juice fresh
- 3 ea Bay leaves
- 1/4 ts Black pepper
- 1 tb Parsley chopped
- 2 lb Fish boneless & cubed 1/2"
Instructions:
Cook onion and garlic in oil till tender. Cut up tomatoes. Peel and chop potato. Stir in undrained tomatoes tomato sauce potato dill bay leaves thyme and pepper. Bring to boil reduce heat cover and simmer 30 minutes Stir in fish lemon juice & parsley. Bring to boil reduce heat cover & simmer 3-5 minutes more.
