Healthy lemon bars
Yield: 12 Servings
Ingredients:
- 2 c Flour
- 1/2 c Butter or margarine
- 1/4 c Brown sugar
- 3 Eggs -- well beaten
- 2 c Brown sugar
- 1/2 ts Salt
- 1 c Coconut -- finely shredded
- 1/2 c Raisins
- 1 c Walnuts -- optional
- 2 tb Lemon juice
- 1 ts Grated lemon rind
Instructions:
Heat oven to 350F. Mix flour butter and 1/4 cup sugar thoroughly. Press= firmly into bottom of lightly greased oblong pan 13x 9 1/2 x 2. Bake 10= minutes. Mix eggs 2 cups sugar and salt together. Stir in rest of= ingredients spread over the partially baked bottom layer. Bake about 25= minutes. Top will be lightly brown. Sample recipe from the cookbook Best-Tasting Healthy All-Time
