Watermelon gazpacho




Yield: 10 Cups

Ingredients:

Instructions:

Salt and pepper Cayenne pepper Seed watermelon cut into chunks and puree in food processor until smooth. Discard rind. Finely chop onion red pepper and jalapeno pepper. Peel and seed cucumber chop into cubes. In large bowl combine watermelon and vegetables. Season with salt pepper and cayenne. Chill 2 hours serve. Source: Toronto Star Newspaper July 2nd 1996.
