Quick creole sauce
Yield: 8 Servings
Ingredients:
- 1/2 c Green peppers -- chopped
- 1/4 c Chopped onions
- 1/4 c Chopped olives
- 1 Garlic clove -- minced
- 2 tb Margarine
- 10 oz Tomato sauce -- * see note
- 1/4 c Milk
- 3 Parsley sprigs -- chopped
- 1/4 ts Pepper
- 1 ts Bay leaves -- crumbled
- 1 pn Thyme
Instructions:
* Original recipe called for one 10-ounce can of tomato soup; I prefer tomato sauce but use soup if you wish or try a mixture of the two. The flavored tomato sauces are excellent. Saute green pepper onion olives and garlic in margarine for 5 minutes (or mix olive oil for half the margarine). Add remaining ingredients; mix well. Cover and simmer for 15 minutes.
