Layered lemon dessert
Yield: 16 Servings
Ingredients:
- 6 tb Butter or margarine
- 1 c Flour
- 1/2 c Pecans; finely chopped ***filling***
- 1 pk Cream cheese; softened; 8 oz
- 1 1/2 c Confectioner's sugar
- 1 1/2 c Whipped topping
- 2 c Sugar
- 1/3 c Cornstarch
- 1/4 ts Salt
- 2 c Water; divided
- 3 Eggs
- 1/4 c Vinegar
- 1/4 c Lemon juice
- 1 tb Butter or margarine
- 1 ts Lemon extract
Instructions:
Recipe by: Sue Klapper Cut butter into flour until crumbly. Stir in pecans. Beat cream cheese and confectioners sugar until fluffy. Fold in whipped top Cool Spread over cream cheese layer. Chill 2 hours or overnight. Source: Taste of Home Magazine.
