Yangtze chicken
Yield: 16 Servings
Ingredients:
- 2 lb Boneless skinless chicken Breasts -- cut in 2-inch Cubes
- 1 Pineapple -- cut in 2-inch Chunks Marinade:
- 1/2 c Soy sauce
- 3/4 c Ketchup
- 1 c Dry white wine
- 1 c Orange marmalade
- 4 tb Honey
- 16 Skewers
Instructions:
Mix marinade ingredients in large bowl. Add chicken and mix well to coat. Marinate for at least 1 hour in refrigerator. Alternate chicken and pineapple pieces on skewers. Grill 1 to 2 minutes on each side or to desired doneness. Recipe By : Lisa Ferro Houston TX (from Friendly Exchange)
