Vegetarian chili
Yield: 6 Servings
Ingredients:
- 1 md Onion; thinly sliced
- 1/2 Green bell pepper; diced
- 2 tb Butter or margarine
- 1 Garlic clove; minced
- 2 tb Chili powder
- 28 oz Canned whole tomatoes - crushed
- 3 c Cooked/canned kidney beans Salt pepper
- 1 1/2 c Shredded cheddar cheese
- 3 c Hot cooked brown rice
- 1/2 c Chopped green onions
Instructions:
Saute onion and green pepper in butter until tender. Stir in garlic chili powder tomatoes and beans. Season to taste with salt and pepper. Simmer 10 minutes. Add cheese and cook stirring until melted. Spoon into individual mounds of rice. Garnish with green onions.
