Quick bean salad with tuna
Yield: 4 Servings
Ingredients:
- 7 oz (198g) can of solid light Tuna drained
- 19 oz (540ml) romano beans rinsed And drained
- 1/2 c Thinly sliced or diced red Onion
- 2 Italian plum tomatoes in Wedges
- 1/2 c Sliced black olives
- 2 tb Lemon juice
- 2 tb Fresh parsley finely chopped
- 1 tb Olive oil
Instructions:
Break up tuna fish and combine with beans onions tomatoes and olives. In separate bowl whisk together lemon juice parsley and oil. Pour over mixture. Toss to coat and serve. Additional oil and lemon juice may be added if desired. Source: The Toronto Star Newspaper July 30th 1996.
