Broiled skewered lamb
Yield: 4 Servings
Ingredients:
- 1 lb Boneless Lamb
- 4 Mushrooms halved
- 4 Pearl Onions
- 1 md Green Bell Pepper cut up
- 1 tb Garlic minced
- 1/8 ts Salt
- 1/8 ts Pepper
- 1/8 ts Thyme
- 1/8 ts Savory
- 1/2 c Red Wine
Instructions:
Trim excess fat from lamb; cut into 1" cubes. Combine lamb mushrooms and bell pepper in a large shallw dish. Combine remaining ingredients; pour over lamb mixture and stir to coat. Cover and marinate in refrigerator overnight. Thread lamb mushrooms onion and bell pepper onto 4 metal skewers. Broil 4-6" from heat 12-16 minutes or until browned turning and basting frequently with marinde. Source: Safeway Nutritional Awareness Programme
