One pan potatoes & chicken santa-fe
Yield: 4 Servings
Ingredients:
- 4 md Potatoes; 3/4" cubes
- 1 lb Chicken breasts;3/4"cubes
- 2 tb Olive oil
- 1 c Prepared tomato salsa
- 1 sm Can corn drained
Instructions:
Microwave potatoes 8 - 10 minutes until tender. While potatoes cook in large skillet toss and brown chicken in oil over high heat 5 minutes. Add potatoes; saute and toss until potatoes are lightly browned. Add salsa and corn;toss until heated through. Time: 20 minutes.
