Mama's best shrimp louis
Yield: 6 Servings
Ingredients:
- 6 c Water
- 2 lb Unpeeled medium-size fresh - shrimp
- 1/2 c Mayonnaise or salad dressing
- 2 tb Chopped green onions
- 2 tb Chopped green pepper
- 1 lg Hard-cooked egg finely - chopped
- 1 tb Chopped pimiento
- 1/2 ts Lemon juice
- 1/2 ts Salt
- 1/8 ts Pepper
Instructions:
Curly leaf lettuce Shredded iceberg lettuce Bring water to a boil; add shrimp and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill. Peel and devein shrimp. Cover and chill thoroughly. Combine mayonnaise and next 7 ingredients; stir well. Pour mayonnaise mixture over shrimp and toss gently. Line a shell-shaped bowl or salad bowl with leaf lettuce; top with shredded iceberg lettuce. Spoon shrimp mixture evenly over shredded lettice.
