White bean pate
Yield: 6 Servings
Ingredients:
- 1 lg Onion finely chopped
- 2 Garlic cloves
- 1/2 c Vegetable broth
- 1/4 c White wine vinegar
- 1 Can (15oz.) white beans
Instructions:
Salt and pepper Red bell pepper strips Carrot slices Saute onion garlic in broth. Stir often over med. heat. Add small amounts of broth until a nicely browned. Add beans to onion mixture and coarsely mash. If needed add a little broth to give a creamy textrue. Add salt and pepper to taste. Place pate in a bowl and chill for up to 3 days. Scoop onto pepper strips and carrot slices.
