Vermont spring chicken
Yield: 6 Servings
Ingredients:
- 1 ea Chicken
- 2-1/2to 3 lb cut up
- 1/4 c Butter melted
- 1/2 c Maple syrup
- 1/2 ts Grated lemon rind
- 1 ts Salt
- 1 ds Pepper
- 1/4 c Chopped almonds
- 2 ts Lemon juice
Instructions:
Place chicken pieces in shallow buttered baking dish. Mix remaining ingredients and pour evenly over chicken. Bake uncovered 50-60 minutes at 4008F. Baste occasionally. Delicious on bed of rice.
