Turkey frittata
Yield: 6 Servings
Ingredients:
- 1/2 c Sliced onion
- 1 Garlic clove minced
- 1 tb Oil
- 1 c Sliced mushrooms
- 1 c Frozen chopped spinach dry
- 2 tb Lemon juice
- 1/8 ts Ground black pepper
- 1 c Chopped turkey
- 6 Eggs beaten
Instructions:
Defrost and squeeze spinach dry. Saute the onion garlic and mushrooms in the oil for 5 minutes. Add the spinach lemon juice and pepper. Cook over low heat for 3 min. Add the turkey and eggs to the spinach mixture. Pour into a greased 9 inch round baking dish. Bake in 350 F oven for 25 to 30 minutes or until eggs are set.
