Spicy noodle salad
Yield: 4 Servings
Ingredients:
- 12 oz Spaghetti
- 2 tb Sesame oil
- 1 1/2 c Carrots grated
- 1 1/2 c Bean sprouts
- 4 Green onions chopped
- 1 tb Orange rind grated
- 1/4 c Orange juice
- 1/4 c Tahini [optl]
- 3 tb Soy sauce
- 1 ts Granulated sugar
- 1 ts Hot pepper sauce
- 1/2 c Peanuts chopped
- 1/4 c Fresh coriander
Instructions:
chopped In large pot of boiling salted water cook spaghetti for 8-10 minutes or until tender but firm; drain and rinse under cold water. Drain well and transfer to bowl; toss with sesame oil. Add carrots bean sprouts onions and orange rind. Combine orange juice tahini soy sauce sugar and hot pepper sauce; toss with spaghetti mixture. Sprinkle with peanuts and coriander.
