Yield: 4 Servings
Ingredients:
- 4 Chicken Breast halves skined
- 4 tb Olive Oil divided
- 2 Red bell pepper seeded *
- 1 tb Parsley finely chopped
- 1/3 c Flour
- 1 Onion large sliced
- 1 c Mushroons
Instructions:
freshed sliced** * Cut into 1" strips ** Salt and pepper to taste. 1. Pre-heat oven to 350 degrees 2. In a shallow plate dredge chicken in flour; shake off excess. 3. In a large skillet heat 2 tablespoons of the oil. Quickly saute the chicken over medium-high heat turning over once untill lightly browned. Remove to a 2-quart covered baking dish. 4. Heat remaining oil in skillet. Over medium heat saute onions pepper strips and mushrooms tossing occasionally untill onions are wilted and peppers are crisp-tender. Season with salt and pepper. Cover chicken with pepper mixture. 5. Bake covered for 30 minutes 6. Uncover; bake 10 minutes more. 7. Sprinkle parsley over all. Serve.
