Rhubarb-pecan muffins
Yield: 12 Servings
Ingredients:
- 2 c Flour
- 3/4 c Sugar
- 1 1/2 ts Baking powder
- 1/2 ts Baking soda
- 1 ts Salt
- 3/4 c Chopped pecans
- 1 ea Egg large
- 1/4 c Vegetable oil
- 2 ts Grated orange peel
- 3/4 c Orange juice
- 1 1/4 c Rhubarb
Instructions:
fresh fine chopped Combine all dry ingredients. Beat egg and oil; add orange juice. Add to flour mix. Add rhubarb. Bake 350F 25-30 min.
