Potato scramble
Yield: 2 Servings
Ingredients:
- 1 md Yellow onion; chopped course
- 1 Carrot; scrubbed & sliced
- 1/4 c Water
- 2 Potato; scrubbed & sliced
- 1/4 lb Fresh mushrooms; cleaned & s
- 1/2 tb Soy sauce
Instructions:
low sodium; optio Preparation Time: 0:40 Cook the onions and carrots in the water for 5 minutes. Add the potatoes and mix well. Cover the pan to steam. Stir occasionally. Add more water if necessary to prevent sticking. Steam 15 minutes then add the mushrooms and soy sauce. Cook another 10 minutes. Serve hot.
