Peas 'n' salmon loaf
Yield: 4 Servings
Ingredients:
- 2 cn Salmon drained(15.5oz ea)
- 2 Eggs beaten
- 1 tb Onion chopped
- 2 ts Lemon juice
- 1/2 ts Salt
- 1/2 c Cracker crumbs fine
- 1 cn Peas drained(8.5oz)
- 1/4 c Tomato catsup
Instructions:
1. Combine in a mixing bowl salmon eggs onion lemon juice salt and cracker crumbs. 2. Carefully fold in peas. 3. Pack into a greased 1 1/2-quart loaf pan; bake in a preheated 350'F. oven 30 minutes. 4. Spread loaf with catsup; bake 5 minutes longer.
