Western beans
Yield: 10 Servings
Ingredients:
- 4 Bacon strips; diced
- 1 lg Onion; chopped
- 1/3 c Lentils; dry
- 1 1/3 c Water
- 2 tb Ketchup
- 1 ts Garlic powder
- 3/4 ts Chili powder
- 1 ts Cumin ground
- 1/4 ts Red pepper flakes dried
- 1 Bay leaf
- 1 cn Tomatoes whole (16 oz) -with liquid chopped
- 1 cn Pinto beans; drained (15 oz)
- 1 cn Kidney beans; drained (16oz)
Instructions:
Lightly fry bacon in a heavy 3-qt. saucepan. Add onion; cook until transparent. Stir in remaining ingredients. Cook over medium heat for 45 minutes or until lentils are tender stirring once or twice. Remove bay leaf before serving.
