Southwestern chicken salad
Yield: 6 Servings
Ingredients:
- 1 pk Perdue Fit 'n Easy Chicken Tenders
- 2 tb Olive oil -- divided Salt -- to taste Pepper -- to taste
- 1/2 c Fresh lime juice
- 1 sm Red onion
- 1/4 c Fresh cilantro
- 1/2 ea Jalapeno pepper -- seeded
- 2 c Cantaloupe -- dried ripe
- 1 lg Avocado -- peeled/seeded/dic
- 1 c Apple -- peeled and diced
- 1 Head Romaine lettuce
Instructions:
Brush chicken with 1 tablespoon oil and sprinkle lightly with salt and pepper. Grill or broil 6-8 inches from heat source for 2-3 minutes perside until cooked through. Dice and reserve. In a food processor combine lime juice onion cilantro and jalapeno. Process until finely chopped. Gradually add oil with machine running. Season to taste with salt and pepper.
