Pineapple zucchini
Yield: 12 Servings
Ingredients:
- 3 Egg whites -- whipped
- 1 c Applesauce
- 2 ts Vanilla
- 2 c Zucchini -- shredded
- 8 oz Can pineapple -- crushed -drained
- 3 c Unbleached flour
- 2 c Granulated sugar
- 2 ts Baking soda
- 1 ts Salt
- 1/2 ts Baking powder
- 1 1/2 ts Cinnamon
- 1 c Raisins
Instructions:
Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing bowl combine egg whites applesauce vanilla zucchini and pineapple. In another mixing bowl combine flour sugar baking soda salt baking powder cinnamon and raisins. Mix wet ingredients with dry ingredients just until moistened. Pour into prepared baking pan(s).
