Viv's raisin pie
Yield: 1 Pie
Ingredients:
- 2 c Raisins
- 1 1/4 c Cold water
- 1/2 c Orange juice
- 1/2 c Brown sugar
- 2 tb Cornstarch
- 1 ts Cinnamon
- 1 ts Orange rind
- 1/8 ts Salt
- 1/4 c Water
- 1 tb Vinegar
- 2 tb Butter
- 1 Pie pastry
Instructions:
top & bottom Boil raisin first amount water and juice for 5 min in a covered pot. Combine the following: brown sugar cornstarch cinnamon orange rind salt (dissolved in second amount of water). Add to cooked raisins. Bring to boil stirring. Remove from heat. Add vinegar and butter. Pour into unbaked pie shell. Top with other pastry. Bake in hot oven (425 F) for 25 min or until done.
